Lebanese Foul Medames, is a popular Lebanese and Middle Eastern breakfast recipe that's made with cooked fava beans, and this recipe is the Lebanese version mixed with garlic & lemon olive oil sauce.

Ingredients

500 gramsdried Fava beans
500 gramsdried chickpeas
3lemon juice
more or less according to taste
salt
to taste
¼ teaspooncumin
3garlic gloves
½ cupextra virgin olive oil

Instructions
Step 1
Wash the beans and chickpeas under running water, then soak them, each one alone in the water for a full night, about 12 hours at least. (the water should cover them with extra 10 cm minimum)
Step 2
The ratio of chickpeas to beans is completely optional, but mostly Lebanese foul mudammas the ration is 1: 1.
Step 3
On the next day, drain the chickpeas and beans from the soaking water.
Step 4
In a saucepan put the beans over a high heat, after boiling, add the cumin, stir it then reduce the heat to low and keep it simmering for min 2 hours, stir for now and then, and don’t let it dry,
Step 5
In another saucepan Cook chickpeas on a high heat until the kernels are soft then discard the foam that appears on the top of chickpea. Then reduce the heat to low and simmer it for a couple of hours (check the water percentage from time to time during cooking so that it does not dry out).
Step 6
To Prepare the sauce, Mash garlic and salt using a mortar pestle and add the lemon juice.
Step 7
In a serving bowel, Add the Cooked beans and the chickpeas (50/50 or as desired, and then add the lemon and garlic sauce with a little bit of the bean’s boiled water and mash them gently a little bit and stir it.
Step 8
Tip: Do not add all the garlic paste and lemon juice once, but add them gradually, with continuous taste, and the same for salt, decorate the too of the beans with chopped tomatoes, parsley and radishes.
Step 9
Drizzle the olive oil generously on top of the serving dish and Serve aside a bunch of mint leaves, spring onions, White onion, whole red tomato, parsley and cucumber pickles.
