Pork
1Pork belly
8 clovesgarlic
¼ cupwhite vinegar
¼ cupsoy sauce
2 Tbspoyster sauce
1 x ½ cupSprite
3bay leaves
2 tsppeppercorns
2 Tbspsugar
2star anise

Instructions
Step 1
Begin with removing the skin from the pork belly and slice into 1 inch cubes. Put to the side and mince 8 cloves of garlic.
Step 2
In a bowl, add the pork, sugar, garlic, peppercorns and pour over the vinegar, soy sauce, oyster sauce & Sprite. Throw in the bay leaves and star anise and give it a good mix. Leave in the fridge to marinade. Preferably overnight or for at least 2 hours.
Step 3
Get a wok or large pan on a high heat and add oil. Place in the pork and sear well on all sides. Then pour in the marinade and cover to let the pork cook through. Then remove the lid and let it simmer until the sauce has reduced and the pork is tender.
Step 4
Meanwhile, rinse your rice thoroughly and put on the heat. Once it’s nice and fluffy it’s time to serve.
