Step 1
Slice the beef, grate the ginger and garlic and mix with all the other ingredients apart from the cornflour, water and veg.
Step 2
Cook on high for 2½ hours or low for 4 hours. Add the carrot and red pepper and cook for another 15 minutes.
Step 3
Just before serving, mix the cornflour with the water, transfer the slow cooker to the hob and stir it in. It should thicken the sauce slightly.
