These crepes are delicious hot or cold, plain or stuffed, served with sweet or savory foods the same day or 3 days later. Use a high-speed blender to make the batter quickly. The blender incorporates tiny air bubbles into the batter, making the crepes lacy and light. The best way to distribute the batter on a dry, hot frying pan is by using a plastic heat-resistant ladle.
