Instructions
Step 1
Sauté onion chopped bell peppers, jalapeños and garlic
Step 2
Add black beans and frozen corn, cook until unthawed
Step 3
Add all seasonings
Step 4
Season chicken breasts with the same seasonings as the filling
Step 5
Cook chicken for 10 minutes
Step 6
Shred the chicken then add to the filling mixture in a large bowl
Step 7
Add Monterey Jack cheese and cilantro
Step 8
Add filling to a 7-8 inch flour tortilla, wrap and secure with tooth pick
Step 9
Add egg rolls to fryer and fry until golden brown
