Ingredients
6 servings

3chicken drumsticks
spicy bbq, thighs, Sunterra or make your own, fully cooked, meat removed, diced and torn

1 x 398mlcan of black beans
rinsed

⅓ cupginger
minced

1white onion
diced

4carrots
medium, diced

4celery sticks
diced

1lemon
zested and juices

1.5 Lvegetable stock
or dark, I prefer Bourdain’s dark stock recipe
Instructions
Step 1
1. In a large Dutch oven, sauté veggies with splash of oil until soft. Add ginger in the final minute. When ginger is fragrant, add chicken [diced and torn] and chicken stock.
Step 2
Simmer until heated through. In the last few minutes, add the lemon zest and juice and mix well.
Step 3
For punch, add 1-2 teaspoons of Sambal Oelek (rooster sauce) per bowl.
