Instructions
Step 1
put the onion into a pan with the spices and a little water for about 4 minutes on medium low heat
Step 2
add your veggies and then, after 6 minutes, add the coconut milk and your vegetable stock or water
Step 3
boil your desired amount of basmati rice in a separate pot
Step 4
let the curry cook for about 25 minutes, stirring occasionally for a cream consistency, feel free to add salt and pepper to taste
Step 5
place a bed of basmati rice in your bowl, scoop the curry and serve
