THE Cookie

The BEST Chocolate Chip Cookie recipe. Adapted for Cook's Illustrated, this cookie is at the sweet spot between chewy and crispy and always delights with the crunchy salt flakes on top. It's got extra fat (lots of butter and an extra yolk), more rich flavor from the emphasis on brown sugar, and I pump up the vanilla. The Maldon sea salt flakes are a must - you can find them in grocery stores now (or online), and you'll use them on anything.

Instructions

Preheat oven to 325

In a medium bowl, whisk the flour, salt and baking soda together - set aside.
Step 3
In a large bowl, mix the sugars and melted butter together until smooth. Make sure the mixture is room temp or cooler. Mix in the egg, egg yolk and vanilla.

Add the flour mixture to the large butter/sugar bowl, mix until just combined.
Step 5
Add and gently stir in the chocolate chips
Step 6
Roll about 2 tablespoons of dough into balls and put on a parchment lined cookie sheet.

Bake cookies for 15-18 minutes, rotating half way. Check at 14 min - the cookies will be ready when the outsides are brown and hardening, but the middle is still puffy.

Immediately after taking the cookies out, generously sprinkle the salt flakes on top of each cookie.

Let the cookies cool on the sheet for five more minutes (they're finishing cooking at this point). Then take off and try not to eat them all

These cookies also freeze BEAUTIFULLY. After forming them into balls, put them on a cookie sheet or plate in the freezer, and once frozen, transfer to a freezer safe bag or container and be ready for a cookie any time. Add a minute or two when you bake frozen cookies.
