Instructions
Step 1
In a roasting tray, roast red pepper, cherry tomatoes and garlic for 20 mins at 200 degrees
Step 2
Once cooked, add to a blender with a splash of cream and some paprika and cajun seasoning
Step 3
Cook pasta as per instructions
Step 4
Fry chorizo slices in pan until crispy
Step 5
Mix pasta and blended sauce in to a baking dish
Step 6
Sprinkle crispy chorizo over top
Step 7
Serve with rocket and parmesan
