Cherry Balsamic Pork with Thyme-Roasted Potatoes and Broccoli

This week’s HelloFresh Hall of Fame recipe is part sweet, part tangy, and all-around delicious, thanks to the jammy, flavorful, stick-to-your-spoon-thick cherry balsamic glaze that our happy cooks absolutely loved the last time we made this recipe. The sides are kept simple, with roasted broccoli and potatoes that allow the pan-seared pork tenderloin to shine. And boy, does it steal the show.

Instructions
Preheat oven to 450°F
Step 1
Toss potatoes on baking sheet with drizzle of oil, thyme, & pinch of salt/pepper. Roast (20-25 min.) until tender and crisped (we’ll be adding more items to the sheet after 10 min.).
Step 2
Heat drizzle of oil in lg. pan over med.-high. Season pork all over with salt/pepper. Add to pan; cook (6-8 min.), turning occasionally, until browned all over. Transfer to another baking sheet; roast (8-12 min.) to desired doneness.
Step 3
While pork cooks, toss broccoli in med. bowl with drizzle of oil & pinch of salt/pepper. Remove potatoes from over after they have roasted 10 min. Give them a toss and push toward one side of sheet. Spread broccoli on other side of sheet. Return to oven & roast (12-15 min. longer) until potatoes are done & broccoli is tender and lightly crisped.
Step 4
Lower heat under pan to med.; add shallot & a drizzle of oil. Cook (4-5 min.), tossing, until lightly browned. Pour in vinegar; simmer until reduced by half. Stir in 1 TBSP Cherry Preserves & 1 TBSP water. Season with salt/pepper & up to ½ tsp sugar (you may use less to taste). Remove pan from heat; add 1 TBSP butter, stirring to melt.
Step 5
After pork is done roasting, return pan to med. Add pork, turning to coat in glaze. Hold pork over pan, letting excess glaze drip off; transfer to cutting board. Let rest (1-2 min.); slice. Divide between plates & drizzle with remaining glaze in pan. Serve with broccoli & potatoes.
