Slow Roasted Arctic Char with Soy Glaze

Ingredients
4 servings
2 ½ tablespoonoyster sauce
1 tablespoonlow sodium soy sauce
1 tablespoonrice vinegar
1 ½ teaspoonlight brown sugar
½ teaspooncrushed red pepper
⅛ teaspoonkosher salt
2 x 12 ozchar filets
skin on
1 tablespoontoasted sesame oil
12 ozbaby bok choy
halved lengthwise
2garlic cloves
smashed
2 tablespoonswater
2 tablespoonsscallions
thinly sliced
Instructions
Step 1
1. Preheat oven to 275 degrees
Step 2
2. Whish together oyster sauce, soy sauce, rice vinegar, sugar, crushed red pepper and salt
Step 3
3. Place, skin side down on a foil-lined baking sheet. Brush fish with 3 tablespoons sauce mixture
Step 4
4. Bake at 275 degrees until reaches intern temp of 120 degrees, about 12 minutes. Transfer to serving plate
Step 5
5. Heat oil in a large skillet over medium high head
Step 6
6. Add bok choy and garlic, cook stirring often, until slightly softened, about 2 minutes
Step 7
7. Add 2 tablespoons water, cover and steam until tender, about 3 minutes
Step 8
8. Remove from heat. Add remaining 2 tablespoons sauce mixture and toss to coat
Step 9
9. Serve with fish, and garnish with scallions
