Ingredients

8 servings

2 cups broccoli florets
2 cupsbroccoli florets
3 cupscanned low-sodium fat-free chicken broth
8 ounces orzo (about 1 cup)
1 cuporzo
6 ounces feta cheese
6 ouncesfeta cheese

Instructions

Step 1
In boiling water, cook broccoli florets until crispy tender. Drain, set aside, and keep warm.
Step 2
In a saucepan, bring chicken broth to a boil, reduce heat, add orzo, and cook until liquid is absorbed. Stir often to keep from burning. Fluff orzo with fork and add feta cheese, stirring to blend together.
Step 3
Transfer orzo to serving platter and top with broccoli florets.
