Sichuan Chicken Lettuce Wraps

Ingredients
4 servings

1 poundboneless skinless chicken breasts
trimmed

2 tablespoonsfresh ginger
thinly sliced

2cloves garlic
smashed

2 tablespoonstoasted sesame oil

2 tablespoonsreduced sodium soy sauce

2 tablespoonsChinese black vinegar
or balsamic vinegar

2 teaspoonschili oil

2 teaspoonsground Sichuan peppercorns

2 teaspoonssugar

12 leavesBoston lettuce

1English cucumber
cut into matchsticks

½ cupcarrot matchsticks
½ cupradish matchsticks

½ cupscallions
thinly sliced

2 tablespoonstoasted sesame seeds
Instructions
Step 1
1. Place chicken, ginger and garlic in a large saucepan. Cover with water and bring to a boil over high heat
Step 2
2. Reduce heat to a simmer and cook for 10-15 minutes. Transfer the chicken to a clean cutting board, discard the ginger and garlic and let cool for 5 minutes
Step 3
3. Meanwhile, whisk sesame oil, soy sauce, vinegar, chili oil, peppercorns and sugar in a medium bowl
Step 4
4. Shred the chicken and stir into the sauce. Let stand for 5 minutes. Serve in lettuce leaves topped with cucumber, carrot, radishes, scallions and sesame seeds
