Instructions

Step 1
Preheat oven to ~400
Step 2
Add chicken thighs and veggies (broccoli, cauliflower, frozen mixed veggies like peas and carrots) in a pyrex dish.
Step 3
Pour olive oil, lemon juice (half or full depending on amount), and most importantly, apple cider vinegar.
Step 4
Then season with salt, pepper, curry powder, garlic powder, onion powder, chicken spices
Step 5
Cover the pyrex with foil, and make holes in the foil then add the pyrex to middle rack of oven for ~45 mins. Take out pyrex, remove the foil, then put pyrex back in without foil in top rack for 10-15 to dry water and crisp up a bit.
