Instructions

Step 1
Wash and soak the black eyed peas for 15 -20 minutes. Do not pour the soaked water out. In the meantime, dice up the potatoes, tomatoes, and onions. Mince garlic and cut ginger into slices.
Step 2
Add olive oil to your pot (medium to low heat). Once oil is heated, add ginger and garlic
Step 3
Before the garlic browns, add in the tomatoes, potatoes, carrots, and onions.
Step 4
Add the black eyed peas with the soaked water. Then add the pork hock.
Step 5
Add 4 cups of hot water (room temperature water is okay too).
Step 6
Close lid and boil on medium until steam comes out. Once it’s boiling turn heat to low and let simmer for 40 minutes.
Step 7
Add salt to your liking.
Step 8
