Not to brag but my mom who's sick with the flu ate 3 bowls in one go! Ingredient list is long but mostly spices and herbs. Use bone in chicken pieces as it's more nutritious and cheaper. I use thighs as it stays soft and juicy, doesn't dry out. Dried or fresh herbs can be used, I used a combination.

Instructions

Step 1
Heat ghee mixed with oil in Dutch oven.
Step 2
Rub chicken spice and Cayenne pepper onto chicken pieces. Brown the pieces of chicken, to add color, remove and set aside.
Step 3
Add sprigs of thyme, 3 bay leaves, rosemary and lemongrass to oil and fry till fragrant.
Step 4
Add onions and Sauté till translucent. Add garlic and fry till crispy
Step 5
Sweat the veggies by Sautéing carrots, celery and garlic with chicken spice, Cayenne pepper, dried mint and parsley, black pepper and salt.
Step 6
Add mixed veg.
Step 7
Add the chicken pieces and add chicken stock to deglaze the pan and liquid covers chicken. Add lime juice and some of the chopped coriander and chilli flakes to taste
Step 8
Bring to a boil and then lower heat and simmer till chicken is cooked through and veggies are soft.
