Step 1
Wrap your squash with aluminium foil and bake it in the oven for about 1 hour (200C/390F). Let it cool down, scoop out the flesh and mix it with a pinch of salt and a drop of extra virgin olive oil.
Step 2
In a pan over medium heat, sizzle your pancetta until nice and crispy, then add your pumpkin cream and season with a pinch of pepper and some more olive oil.
Step 3
In the meantime, let’s make your beautiful CARBOCREAM! In a bowl, mix egg yolks with grated Pecorino cheese until beautiful.
Step 4
Boil your spaghetti in some salted water, drain and add them to the pan and toss well over the heat to combine all the flavours together.
Step 5
Turn the heat off and add your CARBOCREAM along with some pasta water and mix until nice and creamy. Buon appetito!
