Use any fruit you like! Frozen mangoes work but frozen berries thaw a bit too soft. Make sure to remove it from the pan before refrigerating leftovers as it may stick.

Step 1
Combine flour, 1/3 cup icing sugar, 1 tsp vanilla and butter in a stand mixer or using a fork or your hands. Press into a greased pie plate. Bake at 375°F until edges start to brown. Meanwhile, combine cream cheese and remaining vanilla and icing sugar. Allow crust to cool completely then spread cream cheese mixture over it in a thin even layer. Top with thin sliced fruit. Refrigerate until serving.
