Instructions

For the dough

Step 1
Mix all the ingredients together and let the dough ball rest for 20 minutes in the fridge.
Step 2
Roll out the dough and poke holes in the bottom. Put it in a baking tin and put baking paper over it and place baking pearls (or dried chickpeas or rice) in it. This ensures that the dough does not rise during baking.
Step 3
Bake for 15 minutes with baking pearls and 3 minutes without baking pearls on 170 degrees celsius.

For the lemoncurd

Step 4
Cook all ingredients together till it's thickened. Make sure you cook it for 25-30 minutes! Then replace it in a bowl and let it cool down.

For the BEST italian meringue

Step 5
Beat the egg whites till it forms soft peeks.
Step 6
Cook the water with sugar till it hit's 116 degrees celsius. Then add the sugar syrup directly to the softened egg whites.
Step 7
Beat till you have a thick, doubled in size meringue. Make sure you have patience for this!

Decorating

Step 8
Put the lemon curd on the cake and spread it all over.
Step 9
Place the meringue in a piping bag. And pipe a lemon mold on the top of the cake. (see the tiktok video)
Step 10
Now burn the top of the meringue with a burner until golden brown. And enjoy!
