Ingredients

2 TbsOlive Oil

2 ¼ csweet onion
large onion chopped

2 tspgarlic
Fresh minced, heaping
1.59lwhole peeled tomatoes cans
with juices

6 cChicken broth
or stock

1 ½ cherb seasoned bread crumbs

1 ½ TbspGranulated Sugar

Kosher salt

pepper
freshly ground

1 cMilk
at least 1%

½ cBasil
thinly sliced and loosely packed

grated parmesan cheese
for garnish
Instructions
Step 1
Heat olive oil in a large soup pot over medium heat. Add chopped onions and cook until soft and just beginning to brown (about 8-10 minutes), stirring frequently.


Step 2
Add minced garlic, stirring constantly until fragrant.

Step 3

Add tomatoes with juices, chicken stock, sugar and bread crumbs. Bring to a gentle boil. Reduce heat, cover and simmer for 20 minutes.

Step 4

Carefully puree tomato mixture in a blender (or with a stick blender in the soup pot).

Step 5

Return tomato mixture to the soup pot. Add milk and basil, and salt and pepper, to taste. Stir to combine. Simmer (covered) for an additional 20 minutes.




Step 6
Serve sprinkled with grated Parmesan Cheese
