Ingredients

2 Tbspextra virgin olive oil
800gTomatoes
De-Skinned & Chopped
1brown onion
medium, chopped
1red onion
medium, chopped
1 tspsalt
½ tspblack pepper
1 Tbsppaprika
100gtomato puree
1 tspgarlic puree
1 TspChilli Puree
Optional
2Carrots
Peeled & Chopped
1beef stock cube
1vegetable stock cube
1250mlWater
Boiling
1 Tbspbrown sugar
1 TbspBasil

200mlcrème fraiche
Instructions
Step 1
1. Heat olive oil in a large pot or saucepan (medium heat), add onions and cook for

2. Add Salt, Black Pepper & Paprika and cook for a further 2 minutes
Step 3
3. Add Tomato Puree & Garlic Puree (& Optional Chilli Puree) and stir in for 30 Seconds

4. Add Carrots and Tomatoes to the Pot/Saucepan
Step 5
5. Combine the Boiling Water with the Beef & Chicken stock Cubes and add to the pot/saucepan, cover and leave to simmer for 25 minutes

6. Add the brown sugar and leave to simmer for another 5 minutes uncovered
Step 7
7. Remove from the heat and leave to cool for 10 minutes
Step 8
8. Add the Basil and Put into a Blender and Blend until smooth (You can also use a hand blender)

9. Return to the pot/saucepan to re-heat, stirring in the Crème Fraiche whilst re-heating

10. Serve with a sprinkle of Basil & Croutons & Enjoy.
