3courgettes
50gParmesan cheese
shredded
200gcream cheese
100gsalmon
0.5avocado
salt
to taste
pepper
to taste
0.33lemon
juice only
chilli flakes
to taste
soy sauce

For the egg wash:
Instructions
Step 1
Preheat oven to 200C (fan)
Step 2
Trim the edges of the courgette and use the vegetable peeler to peel them into long strips. Continue until you reach the seeds, then flip over and repeat. Pat dry very well.
Step 3
On a baking tray, lined with parchment assemble the courgette in a ābasket patternā
Step 4
Mix egg yolk with milk and brush on top of the courgette. Then, sprinkle with the shredded parmesan cheese.
Step 5
Bake for 20-25 minutes, or until golden.
Step 6
When ready, let it cool, then tip it upside down on cling film, and remove the parchment.
Step 7
Spread cream cheese on a cooled base, then sprinkle with salt and pepper.
Step 8
Then place salmon slices on top of the cream cheese. Leave a few cm free on one of the long edges.
Step 9
Add avocado slices and sprinkle with lemon juice.
Step 10
Add chilli flakes if desired and then roll tightly together from the opposite side of the free edge.
Step 11
Wrap in cling film and place in the fridge for 1 hour to firm.
Step 12
Remove the cling film and slice the roll before serving.
Step 13
Serve with soy sauce and enjoy!
