Instructions
Step 1
Place the gammon joint in a saucepan that will take it comfortably cover it with cold water bring it to the boil then throw out the water

Add the Bayleaf peppercorns and onion and pour in 3/4 of a pint of cider and enough water to cover bring this to the boil and simmer gently for an hour then remove the gammon let it cool a little then with a sharp knife cut off the string and remove the skin

Stand the gamin up fat side uppermost and score the fat diagonally across in One Direction then the other so that it stands out in a diamond shaped pattern
Step 4
Into each diamond insert a clove then spread the mustard all over the joint and press the brown sugar all over to put the joint in a roasting tin with the remaining quarter of a pint of cider in the bottom place in the oven preheated to 200°C and bake for 45 minutes basting it now and then with the cider and juices
