Instructions

Step 1
Heat skillet over medium-high heat. Add just 1 tbs olive oil

Add the beef and cook until browned.

Meanwhile in a stock pot, heat 2 tbs olive oil.

Add the chopped veggies to the pot and saute until onions are golden.
Step 5
Add garlic and spices. Continue to saute for 1 min

Add the stock and diced tomatoes. Bring to a boil.
Step 7
Reduce heat to low and simmer for 2-3 hours
