Step 1
Use a knife to cut the top off the pepper, then scoop out the seeds.
Step 2
Sit peppers on a plate, cut side up, and microwave on high for 5 minutes until soft and wilted.
Step 3
Meanwhile, mix rice with tomato, pesto, chopped olives and half the goat cheese.
Step 4
Scoop mixture into pepper, top with remaining goat cheese, and continue cooking for 5 minutes.
Step 5
Plate up and enjoy!
