Creamy feta rice with capers olives au Fried tomatoes and herbs make for a super delicious meal . This recipe is the result of me experimenting because I was seeing feta pasta everywhere and wanted to do something a little different and also adding gluten free veggie broth To this keeps the meal gluten free .

Step 1
Get a casserole dish (preferably one that has a lid. Now add washed rice then place the Block of feta in the middle of the rice
Step 2
Dice an onion and slice Garlic and olives then add that with some sun dried tomatoes and capers . Drizzle some olive oil over the feta then add oregano .

Step 3
Add 3 cups of vegetable broth ( gluten free broth if you are making this gluten free ) then cover with a lid and bake at 200 c / 400 f for 30 minutes

Once baked remove the lid and let it rest a few minutes . Then mix the feta into the rice to make it creamy and enjoy
