Instructions

Step 1
If using a gas grill, preheat on high for 10 minutes. If using a charcoal grill, light charcoal and prepare for indirect cooking (charcoal on one side of the grill).
Step 2
Lightly coat brats and onion slices with oil and place on the grill. Turn the brats and onions often being careful not to overcook them. Place seared brats and onions in the pan. If using a gas grill, leave on one burner on the far right or left and turn off the others. Place onions, butter and peppercorns in the pan. Pour in the beer just enough to cover the brats and place pan on the cool side of the grill opposite side of the lit burner or charcoal.
Step 3
Cook brats until you reach an internal temperature of 160°. Serve brats on fresh rolls and top with the onions and spicy brown mustard.
