Ingredients

For the cauliflower drizzle
¼ cupolive oil
2 clovesgarlic
finely chopped
¼ cupgreen onion
chopped
1 cupparsley
fresh, chopped
1 tspsmoked paprika
sea salt
pepper
For the Lemon Avocado Parsley Dressing
Instructions
Step 1
Preheat oven to 420°
Step 2
Rinse. Remove leaves from large whole cauliflower and boil in lightly salted water for 10 mins until just about soft. Remove from water and place in baking dish
Step 3
Combine all ingredients for cauliflower drizzle, once combined lightly drizzle over the top of whole cauliflower
Step 4
Roast whole cauliflower in oven 20/25 mins until golden brown and onions are crispy.
Step 5
While roasting. Combine all ingredients for Lemon Avocado Parsley dressing in blender and blend until creamy.
Step 6
Drizzle on roasted cauliflower. Enjoy
