Clean and Brine a Turkey

For a 10 pound tukey this is the best way to clean and brine it. Here is how I did it in 24 hours. As my first time doing it by myself, I had to do a pretty good research but here is the best one.

Instructions
Step 1
Remove the plastic, neck and gizzard bag from the turkey and rinse gently only with cold (not warm) water to clean out the cavity. That's the key: rinsing out the cavity. Let the water flow through the cavity. Hold the bird up to drain thoroughly from the cavity into the sink. Do this 3 to 4 times.
Step 2
Let the turkey rest in a big bowl with cold water. Change water every 30 minutes and if turkey cannot be completely covered, rotate every 30 minutes to keep the turkey chilled. So it doesn't create bacteria.
Step 3
In a large pot that fit the turkey or container, add enough water so the turkey can be completely cover, add the salt, brown sugar, oregano, bay leaves and limes. Cut the limes in 4 pieces. Set the pot in the fridge over night or for 12 hours until you are ready to start cooking.
Step 4
Next day, the turkey should be completely defrosted, remove from the brine and rinse again with cold water.
