Smoked Salmon, Sesame & Avocado Salad

This is a beautifully simple salad that I love to serve for lunch for two. The tamari in the dressing adds a depth of umami flavour that takes these lettuces to a new level or moreish!

Ingredients
2 servings
1 headcos lettuce
roughly torn
1 headradicchio
roughly torn
1cucumber
peeled and sliced
2spring onions
chopped
3 Tbspsesame seeds
1avocado
sliced
100gsmoked salmon
Dressing
Instructions
Step 1
Prepare the dressing by combining all the ingredients in a small bowl or jar. Set aside.
Step 2
In a large bowl add the lettuce, radicchio, cucumber, spring onion and sesame seeds. Pour over the dressing and toss to combine. Place in a serving dish.
Step 3
Top salad with avocado and salmon. And sprinkle with extra sesame seeds to serve.
