Step 1
Step 1 Whisk the egg, egg whites, yoghurt, flour and cinnamon together in a large bowl.

Add the toast and gently push down so that the slices soak up all the liquid.

Step 2 Heat the butter in a large frying pan and add the soaked slices of toast.
Step 4
Fry for 2 minutes on each side then transfer to a plate.

Meanwhile put the blueberries and maple syrup into a small saucepan, bring to the boil then simmer for 2 minutes until soft and syrupy.
Step 6
Spoon over the French toast.
