Vegan Broccoli Potato Soup

I'm not sure about the nuts in it. I think I will leave them out next time

Delicious and healthy! I will make again. I didn't blend in my Vitamix. I just used an immersion blender because it was easier. The resulting soup had small bits of cashew that were unblended, but I didn't mind. I did add the tumeric, as I thought it was needed for depth of flavor. Don't skip the fresh chives! They are the perfect touch!

Enjoyed, but would prefer an herby flavor over the nutritional yeast flavor. Will make again, but will probably not blend as I like bites of vegetables in my soups. Blanched the broccoli and added to each bowl separately.

Good but simple-flavored. I'd add some herby spices to this. Also cook the broccoli longer than the recipe calls for.

So yummy! It’s going to be a staple. Adding more stock at the end and when reheating was a nice way to thin it out just a bit more. Leftovers were even better.

Great soup, and super filling! I had a small slice of GF bread on the side and I really didn't need it! I saved leftovers and froze some as well. Will make again!

I've added carrots, cherry tomatoes, red onions, green onions, oven roasted Potatoes, cashews and nutritional yeast.

Used chicken broth to make it dairy free rather than vegan, used extra garlic. This was deliciously creamy!
