Instructions
Step 1
Heat the oil in a large pot in medium-high heat. Add the onion and fry for 2 minutes, add the garlic and continue to cook until the onions look translucent. Add the leeks and salt and cook for a further 7-10 minutes until slightly browned.
Step 2
Add the potatoes and vegetable stock and bring to the boil. Reduce the heat and simmer for about 25-30 minutes.
Step 3
Take the pot off the heat and blend the soup with a hand-held blender. Add and salt, pepper to taste and chives to garnish. Serve hot or cold
