Instructions

Step 1
1. Add 5/8 cup of dried chickpeas to a large bowl and cover with water. Soak the chickpeas for 8-10 hours or overnight.
Step 2
2. Add the soaked, drained chickpeas to a large pot and cover with water and bring it to a boil for around 1 to 1.5 hours. Simmer until they reach the desired tenderness. It will be 2 cups of cooked chickpeas
Step 3
3. Add the drained chickpeas to a mixing bowl and mash them with a fork. Or you can use a food processor
Step 4
4. Add in Greek yogurt, onion, celery, cucumber, lemon juice, garlic, salt and pepper, and cilantro
Step 5
5. Mix well, and serve on gluten-free bread with leafy greens or can serve as a salad
