Easy dinner or meal prep, perfect for hot days. We usually make a batch and have it for dinner then 2-3 days of lunch after and it’s just as good leftover.

Instructions

Step 1
Boil water & cook pasta following the directions on the box.
Step 2
When pasta is al dente, run it under cool water to stop the cooking and cool the noodles. Set noodles aside to dry
Step 3
Season your chicken with salt, pepper, and BBQ seasoning. Cook chicken however you prefer (Grill, bake, or air fry chicken) and then chop it into bite-sized pieces.
Step 4
Dice the bell pepper and chop the green onion
Step 5
Add pasta, mayo, Greek yogurt to a bowl and mix to combine/coat noodles
Step 6
Add toppings (corn, bell peppers, onion, chicken) to your noodles. Top with salt, pepper, and BBQ seasoning to taste. Mix into the noodles and enjoy :)
