Seared steak and field pea salad

I used a mix of white wine vinegar plus balsamic to marinate the meat. Charring in an iron skillet is what gives this recipe it’s flavor. Very good!

Instructions

For the marinade:

Step 1
Mix 1/4 c olive oil, 1/2 c vinegar and 2 Tbs brown sugar, marinate meat in this 2 to 12 hrs

For the salad:

Step 2
Char 2 cobs of corn in oil in iron skillet, and the red and yellow pepper planks, and a few green beans as well. Cut corn off cob, cut planks up, mix with 1/2 can black eyed peas.
Step 3
Mix 1 Tbs olive oil, 1/2 tsp salt, and 1 Tbs vinegar, pour over the salad.

For the steak:

Step 4
Remove from marinade, sear 2-3 minutes per side for med rare, cut across grain and serve over salad.
