Ingredients
4 servings
½ cupfresh cilantro
chopped
2limes juiced
1 tspgarlic
minced
⅛ tspsalt
⅛ tsppepper
1 lbchicken tenders
¾ cupcanned coconut milk
¼ cupfish sauce
1serrano chili
seeded and minced
3green onions
sliced
1carrot
medium, shredded
1cucumber
peeled and sliced thinly
⅓ cuppeas
⅓ cuproasted peanuts
rice
or Pad Thai noodles, cooked according to package directions
Instructions
Step 1
In plastic bag, mix first 5 ingredients (cilantro through pepper) Reserve half in a bowl.
Step 2
Add chicken to bag. Seal and chill 15 minutes.
Step 3
Add remaining ingredients to bowl and reserved mixture.
Step 4
Broil chicken on skewers 10 minutes or until cooked through
Step 5
Serve dressing over noodles or rice and top with cooked chicken.
