My nonna has literally been making the same lasagna recipe for Christmas for over 50 years and it is honestly super delicious and easy to make! 😍
For a vegetarian alternative you can double the amount of mushrooms and remove the sausage 😋
For a vegan alternative, same advice for vegetarians plus you can make your bechamel with soya milk and vegan butter and replace Parmigiano cheese with the same amount of nutritional yeast! Don’t worry I won’t tell my nonna 😉🌱

Ingredients
6 servings
For the FILLING
500gmushrooms
1garlic clove
fresh parsley
small
extra virgin olive oil
6pork sausages
white wine
or vegetable stock
For the BECHAMEL SAUCE

Instructions
Step 1
Clean and chop your mushrooms.
Step 2
In a pan over medium low heat, add a drizzle olive oil and garlic clove and sizzle for 60 seconds.
Step 3
Add your chopped mushrooms, season with salt and pepper, cover with a lid and cook for 15-20 mins, stirring occasionally.
Step 4
Sprinkle some freshly chopped parsley on top and set aside.
Step 5
Remove the skin from your sausages, cut them with a knife and cook the meat in a very hot pan over medium low heat for about 15 mins or until fully cooked.
Step 6
Halfway through the cooking, add your white wine/ vegetable stock too.
Step 7
It’s time to make your béchamel sauce!
Step 8
In a saucepan, melt butter and add flour little by little.
Step 9
Stir continuously then slowly add milk and keep stirring until it thickens!
Step 10
Turn the heat off and add your grated Parmigiano cheese and stir one last time.
Step 11
Spread some of your béchamel at the bottom of an oven dish, layer your pasta sheets.
Step 12
Add a couple of spoons of mushrooms and sausage, some grated Parmigiano and some more béchamel.
Step 13
Repeat, cover with aluminium foil and cook in the oven for about 45 mins, then remove cover for 5 more mins to make it nice and crispy! (170C/340F).
