Instructions
Step 1
Begin boiling water for the pasta and set broiler to high
Step 2
Trim and halve zucchini, then thinly slice into half-moons
Step 3
Toss zucchini with a large drizzle of olive oil, half of the Italian seasoning, salt, and pepper, and place on a baking sheet
Step 4
Broil zucchini for 5-7 minutes
Step 5
Heat a drizzle of olive oil in a large pan over medium-high heat
Step 6
Brown sausage and remaining italian seasoning (4-6 minutes)
Step 7
Cook spaghetti until al dente (9-11 minutes)
Step 8
Reserve 1/2 cup of cooking water, drain pasta and set aside
Step 9
While pasta is cooking, stir in crushed tomatoes, stock concentrate, and sugar with sausage.
Step 10
Season sauce with salt and pepper to taste.
Step 11
Bring sauce to simmer and cook until reduced (5-7)
Step 12
Stire in sour cream, and 2 tbsp butter into sauce
Step 13
Add in drained spaghetti and zucchini, toss to coat
Step 14
If needed, stir in reserved cooking water until pasta is thoroughly coated
Step 15
Sprinkle with Parmesan and serve
