Baba Ghanoush is a very famous dip from the Middle East and its the closest to Bulgarian kyoopolu. Yes, but sometimes one-two ingredients can change the overall taste of the dish and this is the exact case. We add to Baba Ghanoush tahini and lemon juice, but sometimes we can serve it with yoghurt.

Instructions
Step 1
Poke holes into the eggplants with a fork, cover them in foil and roast them in the over for around 25-30 minutes on 180 C with ventilator.
Step 2
Midway in the roasting process you can uncover the foil and flip them so that they can get roasted on all sides.
Step 3
When they're ready, let them cool down a bit and empty only the inside of the eggplants in a bowl.
Step 4
Mash them very well and add the rest of the products. The parsley and garlic are chopped finely!
