Ingredients
8 servings
1 Tbspvegetable oil
2 lbground beef
or turkey
2yellow onions
medium, diced
1red bell pepper
seeded and diced
3cloves garlic
minced
2poblano peppers
seeded and diced
1jalepeno
diced
¼ cuptomato paste
3 Tbspchili powder
2 tspsmoked paprika
1 tspground cumin
2 tspkosher salt
½ tspblack pepper
½ tspcayenne pepper
1 Tbspchili base
optional but highly recommended
30 ozcan dark red kidney beans
ned, drained and rinsed
28 ozfire-roasted diced tomatoes with liquid
canned
2 cupsbeef broth reduced sodium
3 Tbspapple cider vinegar
1.5 ozChocolate
unsweetened, 100% cacao
Instructions
Step 1
Add vegetable oil to bottom of large heavy bottomed pot. Heat over MED HIGH heat and add beef. Cook about 6 minutes, crumbling the meat as it cooks.
Step 2
Add onion, bell pepper, poblano, jalepeno, and tomatoes, and cook 3-4 minutes, until softened.
Step 3
Add garlic and cook another 30 seconds or so.
Step 4
Stir in all remaining ingredients and bring mixture up to a boil. Once boiling, reduce heat to MED LOW and simmer for about 45-55 minutes, until thickened to your liking.
