Grandma's Enchilladas

This is my adaptation of Grandma's recipe. Hers was much hotter and she used canned enchilada sauce. She only topped her enchiladas with cheese, onion, lettuce, tomatoes and sometimes a fried egg. She fried her tortillas instead of softening them like I do.

Instructions

Step 1
Brown hamburger meat and drain. Add tomato paste, 3 cans of water and enchilada mix. Simmer.
Step 2
Soften tortillas in sauce. You may need to add a little more water to the sauce as you soften several tortillas. Add a little at a time as needed.
Step 3
Layer tortilla, meat sauce, cheese and onion on plate to desired height. Each person can then top enchilada with favorite toppings.
