Ingredients

1 headbroccoli
medium, cut into small florets
350gcod
150gSmoked Haddock
400mlsemi skimmed milk
4 Tbspcornflour
4 Tbspwater

For the leeky mash
Instructions
Step 1
To make the leeky mash peel the potatoes and chop them into 4cm chunks in a saucepan cover with cold water bring to the boil reduce the heat a little and simmer for 18-20 mins or until the potatoes are tender
Step 2
Meanwhile heat the fry light in a non stick frying pan and fry the leeks for 5 mins until soft but not coloured stir often drain the potatoes then tip them back into the pan and mash using the milk and season to taste until smooth stir in the leeks and set aside
Step 3
Preheat the oven to 220°c/ fan 200°c/ gas 7 half fill a medium pan with water then bring to the boil then add the broccoli florets and bring the pan back to boil cook the broccoli for 2 mins then drain in a sieve under running water until cold and set aside
Step 4
Cut the fish into chunks of about 3 cm and set aside pour the 400 ml of milk into a large non stick pan and bring to a gentle simmer mix the corn flour and water together in a small bowl until smooth and add the warm milk bring to a gentle simmer and cook on a low heat for 2-3 minutes stirring constantly with a wooden spoon until the sauce is thick and smooth season with salt and pepper
Step 5
Add the fish to the sauce and cook for 2 minutes stirring only occasionally so the fish doesn't break up to much add the peas sweetcorn and brocoli to the mixture and stir gently until evenly combined
Step 6
Spoon the mixture into a shallow oven proof dish top with the leeky mash making sure evenly spread to the edges spread a little grated low fat cheese on top and place on an oven tray and cook in the oven for 35-40 minutes or until lightly browned bubbling and hot throughout
