Instructions
Step 1
Clean and break long green bean into roughly 3-4 inch long pieces, transfer to a bowl, set aside.
Step 2
Bring a large pot of water to a boil. Add green beans in boiling water for cook for 3-5 minutes, add in some salt in the mean time. Remove from boiling water to drain, set aside.
Step 3
Prepare and slice garlic and dried chili, set aside. Prepare and slice pork belly into ½ inch thick small pieces, transfer to a bowl.
Step 4
Heat up cooking oil in a skillet, place sliced pork belly evenly in the skillet to cook on medium high heat (this step is to release pork fat inside pork belly). Simmer for several minutes until they become golden brown and crispy on the edges (remove excessive fat if needed).
Step 5
Add in sliced garlic and dried chili to stir until aromatic, further throw in sliced pork belly, and toss around. Further add in Pi Xian bean paste and black bean paste to mix well, making sure every single pork piece is coated with the sauce. Finally add in light soy sauce, chicken powder and sugar to taste. Toss around and mix thoroughly before plating. Perfect paired with rice.
