Instructions

Step 1
Preheat oven to 350F.
Step 2
Head a skillet over medium-high. Add turkey, salt, pepper, 1/2 tsp thyme, and sage.
Step 3
Cook 6-8 minutes, chopping with a spatula. Remove the turkey from teh pan.
Step 4
Add oil to the pan. Add potatoes in a single layer. Cook 6-8 minutes without stirring.
Step 5
Slice leeks and celery.
Step 6
Crack eggs into skillet. Place oven-safe skillet into oven. Bake 10 minutes. If not oven safe, keep on stove in medium heat while covered.
Step 7
Juice the orange to measure 2 Tbsp. Combine with remaining thyme and cranberry sauce. Serve with turkey hash.
