These turned out really great, the little burnt spots give a little caramelisation to the top. They are very sweet though

Instructions
Step 1
1. Preheat your oven to 290°C or as hot as it can go

2. In a bowl whisk flour and 1/4 cup of milk until smooth
Step 3
3. Bring sugar, cinnamon and water to the boil and maintain until it reaches 100°C.
Step 4
4. Remove cinnamon stick and slowly stream syrup mixture into flour and milk whilst constant whisking.
Step 5
5. Add vanilla and whisk for 1 minute or until mixture has cooled/ is not hot (so we don’t scramble our eggs)

6. Whisk in the yolks then strain into a separate bowl. Cover with plastic wrap and set aside

7. Roll puff pastry into a log then cut into 6 even pieces.

8. Place pastry pieces cut-side up in a cupcake tin(there will be a swirl on top) then mould it into the tin with a wet thumb. Make sure the pastry is an even thickness.

9. Full each tart 3/4 of the way and bake for 10-12 minutes (the tops should burn slightly and the Custard will be set)

10. Optionally sprinkle with powdered sugar
