Step 1
Preheat oven to 290C (fan , or to maximum.
Step 2
In a saucepan, combine flour and salt. Start pouring the milk slowly, whisking constantly to avoid any lump. Then cook until thickened over the medium-low heat, constant whisking. When thickened, set a side and let it cool for 10 minutes.
Step 3
Meanwhile, prepare the syrup. In another saucepan combine sugar, water, vanilla extract, cinnamon stick and lemon peel. Cook on a medium heat until the thermometer reads 100C. If you don’t have a thermometer, then once boiled, cook it for 2-3 minutes. Don’t stir while cooking.
Step 4
Slightly beat egg yolks and slowly pour it into the milk mixture.
Step 5
Remove the cinnamon stick from the syrup and slowly add to the mixture. Then strain into a pouring cup.
Step 6
Fold the pastry in half.
Step 7
Roll it into the log.
Step 8
Divide into 12 equal parts.
Step 9
Grease the muffin tin with butter and place each of the 12 pieces of pastry in it. The dough should protrude slightly from the edges of the form.
Step 10
Fill each cup 3/4 full and bake for 12-13 minutes or until golden brown or even blackened a bit.
