Cilantro Lime Rice

Instructions
Step 1
Cook rice according to directions. Remove from heat (and water). Add salt, garlic powder, lime zest, cilantro.
Step 2
Sauté veggies in olive oil for ~5 minutes. Reduce heat. Add cilantro lime rice and mix well. Remove from heat and transfer to a plate or portion into containers.
Step 3
Season chicken with taco seasoning on both sides. Cook in olive oil 4-5 minutes each side. Remove from heat, cover and allow to rest 5 mins.
Step 4
Cut chicken into bite size pieces. Top the rice and veggies with chicken, top the chicken with a small amount of shredded cheese.
Step 5
To serve, microwave until steaming and cheese is melted. Squeeze 1/4 lime over chicken.
