Roasted Red Pepper Couscous with Chicken Sausage

Ingredients
5 servings
Roasted Red Pepper Sauce

2roasted red peppers

3 Tbspsun dried tomatoes

fresh basil

2 Tbsptoasted pine nuts

1.5lemons
Juice from

3cloves garlic

1 tsphoney

2 Tbspparmesan
1 spoil from sundried tomatoes

salt
to taste

pepper
to taste
For the rest of the dish
Instructions
Step 1
Blend all ingredients together for roasted bell pepper sauce and set aside
Step 2
Boil couscous as instructed on package
Step 3
While couscous is cooking, chop chicken sausage and pan fry with a little bit of olive oil.
Step 4
Chop red peppers and sautee for 5 minutes.
Step 5
Combine cooked couscous with chopped red peppers and 3 tablespoons of sauce.
Step 6
To serve, add couscous on top of a handful of arugula. Top with chicken sausage, sprinkle with parmesan and drizzle on red pepper sauce.
