Instructions

Step 1
1. Combine pork, egg, scallions, rice wine, soy sauce, ginger, sesame oil, sugar, cornstarch, white pepper and salt in a large bowl until well blended

2. Fold in cabbage

3. Cover and refrigerate for at least one hour or overnight
Step 4
4. Set out dumpling wrappers and a small bowl of water. Line 3 large baking sheets with parchment paper and dust with cornstarch

5. Place 6 wrappers on a clean work surface and spoon about 2 teaspoons of filling into the center of each

6. Wet your finger and run around the edge of a wrapper

7. Fold the wrapper over to form a Half Moon shape and press the edges together to seal

8. Pleat the edges if desired

9. Arrange the dumplings on a prepared baking sheet without letting them touch. Repeat with the remaining wrappers and filling

10. Heat 1 tablespoon canola oil in a large nonstick skillet over medium high heat. Add 12 dumplings in a single layer not touching

11. Add 1/2 cup warm water to the pan. Cover and cook until starting to brown on the bottom, 6 to 8 minutes
Step 12
12. Uncover and cook until the liquid is evaporated, about 30 seconds more
Step 13
13. Repeat with the remaining oil, water and dumplings
